I made these for dinner after finding this recipe. They were so moist and tender the the garlic just caramelized into little bits of goodness. The recipe did not take that long to prepare and the flavor was so yummy! I will definitely be making this again. It would make a perfect company dish, too.
Baked Garlic Chicken Thighs

Wonderfully moist and easy to prepare. Serve with a large green salad and baked potato.

Ingredients
- 6 cloves garlic, finely minced
- 1 teaspoon dried leaf oregano
- ½ teaspoon salt
- 1 teaspoon chili powder
- ¼ teaspoon ground cumin
- dash freshly ground black pepper
- 2 tablespoons olive oil
- 4 chicken leg quarters
- ½ cup chicken broth (part dry white wine, if desired)
Instructions
- Mix first seven ingredients together in a small measuring cup.
- Remove some of the loose chicken skin with kitchen shears (the skin will not get crispy and if you put the seasoning on top of the skin, you will lose a lot of the garlic flavor)
- Spread the garlic mixture on top of each of the chicken thighs.
- Place chicken in lightly greased 9x13x2 pan. Pour chicken broth (or wine) in the bottom of the 9x13x2 pan.
- Bake in 425 degree oven for approximately 40-50 minutes, or until the juices run clear.
- *You could assemble this in the morning and refrigerate it until you are ready to bake it*
