Sometimes our kids need a little variety to theit breakfast. These cookies are a snap to make and the kids love the fact that they get to eat a cookie with chocolate chips for breakfast. A serving is 2 large cookies. These make approximate 20 large cookies or 10 servings. These freeze well to make an easy breakfast on another day.

Banana Oatmeal Breakfast Cookies
This cookies are great for traveling and freeze well. My kids love the because they have a few chocolate chips to make them cookie like.
Ingredients
- 3 large very ripe bananas
- 4 cups rolled/old fashion oats
- 2/3 cup unsweetened applesauce
- 2 eggs
- 1/2 cup milk
- 1/2 Cup raisins
- 1/2-1 cup coarsely chopped walnuts
- 1 tsp vanilla
- 1.5 tsp cinnamon
- 1/2-1 cup chocolate chips
Instructions

Preheat oven to 350F

In a large bowl, add the peeled bananas and mash them.

In a blender or mini chopper, add two cups of oats and chop until a fine powder.

Add grounded oats plus the additional 2 cups of oats two the bananas.

Add all of the other ingredients to the bowl and mix well.

With an ice cream scoop, place mixture in a greased cookie sheet. With a fork, gently flatten the mixture to make them more cookie shaped and so they bake evenly.

Bake for 15-20 minutes until cooked through.

Serve warm or freeze for an easy breakfast.
