Christmas Ginger Cookies – Soft and Chewy

Delicious and full of cinnamon, ginger and cloves, these are sure to make your house smell like the holidays when you make them!

Ingredients

  • 1 cup light brown sugar
  • 3/4 cup butter softened
  • 1/4 cup molasses
  • 1 egg
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp ground cloves
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/4 cup white sugar for rolling

Instructions

  1. Add soften butter to a medium size bowl, along with brown sugar, egg and vanilla. Mix well until light and fluffy.

  2. Add molasses and spices and mix.

  3. Add flour and stir until combined.

  4. Using a cookie scoop, drop rounds of dough into white sugar and gently roll into a ball. Place on ungreased cookie sheets and bake at 375­°F for 8 minutes. If you want a more crisp cookie, cook for another 2 minutes.

  5. Remove cookies from cookie sheet and place on wire cooling rack. Enjoy!
