Cranberry Balsamic Instant Pot Pork
This tastes like you've worked all day in the kitchen, but it comes together quickly and you can have a great meal in just little bit of time.
Ingredients
- 3 pounds pork roast or thick cut pork chopped cut into chunks
- 2 tsp oil
- dash salt and pepper
- 1 cup fresh cranberries
- 1/4 cup balsamic vinegar
- 1 1/2 cups water
- 1 tsp dried thyme
- 1/2 tsp garlic powder
- 1/4 tsp crushed rosemary
Instructions

Add oil to Instant Pot and select saute setting. Season chunks of pork with salt and pepper. Add pork when the Instant Pot is HOT.

Allow pork to brown, stirring periodically until well browned.

Add balsamic vinegar and scrape up all of the brown bits on the bottom of the pit.

Add all of the rest of the ingredients to the instant pot. Set to high pressure for 25 minutes and use natural pressure release.

When pressure has naturally been released, remove pork from the pot. Using a stick immersion blender, blend all of the ingredients in the pot until smooth.

Pour sauce over pork. Serve with rice or mashed potatoes.
