We all have those times were our refrigerator is burgeoning with leftovers that no one wants to eat. One way I combat that problem is by making dump soup…making soup out of whatever leftovers are found in my refrigerator. The possibilities are endless and no two pots of soup ever taste the same.

Dump Soup: How To Make A Delicious Soup From Leftovers

Ingredients

  • 1 lb ground beef
  • 1 small onion, chopped
  • 1 pkg dry onion soup mix approximately 3 tablespoons if using homemade
  • 1 28oz can crushed tomatoes
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 4-6 cups water

Optional leftover add-in ideas:

  • carrots, pasta, rice, celery, peppers, black beans, pinto beans, navy beans, lentils, most tomato based products such as tomato pasta or pasta sauce, beef leftovers, potatoes, zucchini, yellow squash, kale, swiss chard, garlic, etc.

Instructions

  1. Brown ground beef and onion until onion is soft.

  2. Add tomatoes, water, and onion soup mix.

  3. Add your hard root type vegetables to the pot first and allow them to simmer for a while.

  4. Then add the rest of your ingredients in to the pot and allow everything to simmer for at least an hour.

  5. Add more water if needed and adjust seasonings, depending on how large your pot of soup is.

  6. Enjoy!!!
