Easy and Hearty Lentils and Cheese

Ingredients

  • 1 large onion, chopped
  • 1 head garlic, minced
  • 1 Tbsp oil
  • 3 large carrots, chopped
  • 2 medium yellow peppers, chopped can be other colors too
  • 1 pound dried lentils, washed and sorted
  • 6-8 cups water
  • 1-28oz can crushed tomatoes
  • 1-6oz can tomato paste
  • Cumin, chili powder, cayenne pepper, salt and pepper to taste
  • 1 pound shredded cheddar cheese

Instructions

  1. In large stock pot, add 1 tablespoon of oil with chopped onion. Cook on medium heat until onions are translucent.

  2. Add garlic and cook for approximately 1 minute or until garlic is fragrant.

  3. Add lentils, carrots, peppers and enough water to cover everything in the pot plus a little extra. Cook until lentils and carrots are tender, approximately 20-30 minutes.

  4. Add tomatoes, paste and spices. Cook until thick and bubbly.

  5. Serve over cooked rice, shredded cheese and chopped red or green onion if desired.
