No one should ever tell you that you can’t cook a fancy dinner in a crock pot. The recipe below is awesome to serve to your family or guests. Don’t be fooled by the title, this isn’t hard to make. Enjoy!

Fancy Stuffed Turkey Breast
1/4 cup melted butter
1 small onion, finely chopped
1/2 cup finely chopped celery
2 1/2oz dry stuffing mix
1/2 – 1 cup chicken broth
2 tbsp fresh parsley
1/2 tsp. poultry seasoning
1 whole uncooked turkey breast (about 5lbs)
Salt and Pepper
Cheesecloth
Dry white wine

Combine butter, onion, celery, stuffing mix, parsley and poultry seasoning. Slowly add chicken broth until moist. Cut turkey breast in thick slices from breastbone to rib cage, leaving slices attached to the bone. Sprinkle turkey with salt and pepper. Soak cheesecloth in wine. Set turkey on cheesecloth. Stuff bread mixture into slits of turkey. Fold one end of cheesecloth over other to cover meat. Place on metal rack or trivet in slow-cooking pot.Cover pot and cook on low for 7-9 hours or until tender. Pour additional wine over turkey during cooking. Remove from pot and take cheesecloth off immediately. If brown breast is preferred, remove from pot and brown in 400F oven for 15-20 minutes. Let stand 10 minutes. Drippings may be thickened for gravy. Serve each person one or more thick slices of turkey with dressing in between. Makes 8 or 9 servings. This recipe designed for a 4 1/2 quart or larger slow-cooking pot.

OK! That’s the recipe, now here are my notes from following the directions.

This is my attempt at slicing the raw turkey breast.

This is how it looked after I stuffed the slices. You can’t fit alot of stuffing into each slice.

This is the stuffing before I stuffed it in the bird.

This is how it looked when I pulled it out of the crock pot. The cheesecloth was a little burnt on the corners but otherwise OK.  An oblong crock pot would work better than a round one, but I didn’t have one.

The turkey was a little pale for my likings.

I placed the turkey on a cookie sheet and broiled it for about 10 minutes. It was just enough to get the top nice and brown.
