If you have ever grown your own zucchini or yellow squash, you know how prolific and inundated you can become with it. That is why I am always looking for a great way to hide use it, particularly in baked goods. I don’t remember where I found this exact recipe, but I was re-acquainted with it this year when I was organizing my recipes. I tried the recipe again and it is amazingly decadent and rich. No one would ever guess that there is zucchini hidden inside of it. This is my go-to brownie recipe! I hope you enjoy it!
Frosted Zucchini Brownies: Decadent and Rich

Ingredients
- ½ cup oil
- 1½ cup sugar
- 2 tsp. vanilla
- 1 egg
- 2 cups flour
- ½ cup cocoa
- 1½ tsp. baking soda
- 1 tsp. salt
- 2 cups shredded zucchini or yellow squash
- ½ cup walnuts (optional)
- Frosting:
- 6 Tbsp. cocoa
- ¼ cup butter
- 2 cups confectioners sugar
- ¼ cup milk
- 1 tsp. vanilla
Instructions
- Preheat oven to 350°
- Lightly grease a 9"x13" pan
- In a large bowl, mix together oil, sugar, vanilla and egg. Then add flour, cocoa, baking soda, and salt.
- Mix well
- Fold in zucchini and nuts
- Spread into prepared pan
- Bake for 25-30 minutes
- Frosting:
- Melt together cocoa and butter. Cool slightly.
- In a medium bowl, mix together sugar, milk and vanilla.
- Stir in cocoa mixture.
- Mix well
- Spread over cooled brownies before cutting into squares
