Pineapple Cupcakes with Chocolate Cream Cheese Icing and Chocolate Drizzle
Dress up a simple butter cake boxed mix into a decadent dessert with pineapple and chocolate!

Ingredients
- 1 packaged butter recipe cake mix
- 1 block cream cheese, softened
- 1 can chunk pineapple in syrup
- 2 teaspoons cocoa powder
- 1 teaspoon almond extract
- 3 tablespoons powdered sugar (10x)
- chocolate syrup
Instructions
- Prepare cake as directed on box using 1 extra egg and ½ juice from pineapple and half water for the water needed.
- Add half of the pineapple chucks.
- Bake as directed and allow to cool completely.
- While it is cooling mix powdered sugar, softened cream cheese, cocoa powder and almond extract. Mix well until smooth.
- Cut each cupcake in half to have top and bottom. Put scoop of frosting on bottom half of cupcake and ice top of cupcake and set at an angle atop the bottom half (no need to try and ice sides).
- Drizzle chocolate syrup over top.
