Holiday Cranberry Orange Bread
Another classic recipe that I grew up with at every holiday meal! I love the bright orange flavor mixed with the tart cranberries. If you don't like chunks of sour cranberries in your bread, just chop the cranberries with a mini food processor before adding them to your dough.
Ingredients
- 2 cups flour
- 3/4 cup sugar
- 1 1/2 tsp baking powder
- 1 tsp salt
- 1/2 tsp baking soda
- 1 egg lightly beaten
- 1 tsp grated orange peel
- 3/4 cup orange juice
- 2 tbsp oil
- 1 cup coarsely chopped fresh cranberries
- 1/2 cup walnuts optional
Instructions

Mix together flour, sugar, baking powder, salt and soda.

In another bowl, add egg, orange peel, orange juice and oil and mix.

Add liquid ingredients just mixed to the dry ingredients and stir just until moistened.

Fold in cranberries and walnuts.

Bake in a greased 9x5x3" loaf pan at 350°F for 60 minutes or until done.

Remove from pan and allow to cool on a wire rack.

Slice when cool or wrap and freeze for up to one month.
