How-To Make Bagels At Home Using A Stand Mixer
This recipe is easy to put together and with the help of a stand mixer, the dough is ready to use in a short amount of time.
Ingredients
- 2 cups water
- 2.25 tsp active dry yeast
- 1/4 cup sugar
- 1 Tbsp salt
- 5.75-6 cups all-purpose flour
- 1 small egg
- 1 Tbsp water
Water Bath Ingredients
- 2 quarts water
- 1 Tbsp sugar
- 1 Tbsp baking soda
Instructions
-
Place all of the ingredients in a stand mixer EXCEPT the egg and 1Tbsp water.
-
With the dough hook attachment, turn on knead setting and set the timer for 10 minutes.
-
Dough will be stiff and not sticky. Once the 10 minutes is up, stop the mixer and place the dough in a bowl and cover with a kitchen towel.
-
Let rise for 1 hour OR until doubled.
-
Once doubled, remove dough from bowl onto LIGHTLY floured countertop. Divide dough into 12-16 equal pieces
-
Roll each piece into a 10" rope and connect ends to form a circle. Roll connected dough ends against the counter to form a round bagel.
-
Place on greased cookie sheet to rest while shaping the rest of the bagels.
-
In a large skillet, add water, sugar and baking soda and bring up to a simmer.
-
Turn heat down and begin adding the bagels into the water, approx 4-5 at a time.
-
After 30 seconds, turn the bagel over in the water and cook the 2nd side for another 30 seconds.
-
Remove from water and place back on greased baking sheet.
-
Add water to egg and beat until well mixed. Carefully brush the egg wash on just the tops of the bagels. Add toppings if desired.
-
Bake in a preheated 425°F oven for 20 minutes or until deeply golden brown.
