Happy Monday everyone!
It’s been four weeks of meal planning and this week I didn’t end up getting to even PLAN our meals for the week. *hanging my head in shame!* The fact is that life happened and with my computer giving up the ghost, things got a tad bit chaotic around here. Two of the meals were eaten at friends homes and another night we just had a very simple meal of pancakes.

For those of you who are new here, I have never, ever, ever attempted to meal plan. It seemed like a daunting task and one that I didn’t want to dedicate the time to. However, as my family has grown, meals become more and more difficulty to just throw together. I felt like I needed to try some intentional planning for our dinners.
Monday: Lasagna, biscuits, salad and low-carb spaghetti squash lasagna
Tuesday: Leftovers
Wednesday: Brats, rice and salad
Thursday: Pancakes
Friday: Art cooked-fried tortillas with hotdogs and cheese
Saturday: Birthday party meal with friends
Sunday: Invited out for dinner
