Last summer, I was searching high and low for the perfect dark chocolate cake recipe for my parents 40th anniversary cake, when I found this recipe. I decided to try it and all I can say is WOW! This cake is amazingly rich and doesn’t need any special ingredients. I have one other chocolate cake recipe that a friend gave me but that one calls for some specialty rum. If you have browsed any of my other recipes here on Parsnips and Parsimony, you know that my goal is to keep these recipes user friendly but the best of simple recipes. This recipe falls under this category.

Here I’m making this recipe for my son’s 8th birthday cake.
- 1¾ cup all purpose flour
- 2 cups sugar
- ¾ cup cocoa powder
- 2 tsp baking soda
- 1 tsp baking powder
- 1 tsp salt
- 1 cup buttermilk (I used buttermilk powder to make my buttermilk)
- 1 cup strong coffee
- ½ cup oil
- 2 eggs
- 2 tsp vanilla
- Preheat oven to 340F (350F will work if you can't go down to 340F)
- Mix all of the dry ingredients in one bowl
- In another bowl, mix together all of the wet ingredients
- Add of the wet ingredients into the dry ingredients
- Mix on medium speed for 2 minutes
- Scrape down the sides of the bowls and mix again for another minute
- Divide the batter evenly between your prepared baking pans
- *Note* This batter is very thin. That's OK!
- Bake for 30-35 minutes or until done and toothpick comes out clean
- Allow to cool 10 minutes before removing cake from pan
