This is the loaf pan that I use. Any larger size pan will work but this is what I use to make two VERY large loaves.

Oatmeal-Molasses Wheat Bread

This wheat bread is full of healthy grains and rich flavor.

Ingredients

Step 1:

  • 4 tsp active dry yeast
  • 2 Tbsp molasses
  • 1/2 cup warm water

Step 2:

  • 6 Tbsp molasses
  • 1/2 cup butter, melted
  • 4 tsp salt
  • 1/2 cup brown sugar
  • 2 tbsp white sugar
  • 4 cups oatmeal, rolled or quick
  • 2 cups boiling water

Step 3:

  • 2 cups water
  • 4 cups ground whole wheat flour
  • 5-6 cups white flour I use bread flour if I have it on hand, but you can use all-purpose as well

Instructions

  1. In a small measuring cup, combine all of the ingredients in step 1 and let rest until bubbly, about 15 minutes.

  2. While yeast mixture is resting, combine the rest of the step 2 ingredients in a very large bowl and stir until butter is completely melted.

  3. Add cold water to oatmeal mixture. Mix. Then add bubbly yeast mixture. Mix.

  4. Add wheat flour and 2 cups of white flour. Mix well. Slowly add the rest of the white flour, turning onto your floured counter when necessary and knead the dough until it is no longer sticky. Kneading will take 10-15 minutes.

  5. Place dough is large bowl and cover. Allow to rise in a warm place until doubled, about 1 hour.

  6. After it has risen, turn dough onto counter and divide into 2 extra-large loaves (11x4x2) or 4 large loaves.

  7. Gently shape each loaf, handling as little a possible and place in greased loaf pans.

  8. Cover and rise until doubled, about 45 minutes.

  9. Bake in preheated 350°F oven for about 1 hour or until they sound hollow. Internal temp should be around 190°-210­°F.

  10. Allow to cool slightly before turning out to wire rack to finish cooling.
