This weekend we celebrated my daughter’s ninth birthday. When I asked her what kind of cake she would like, she said a cake full of flowers. Hmmm….rather stumped at how I was going to achieve the desired cake. I searched the web for some ideas but there wasn’t all that much out there that I could qualify as easy. I chatted about my dilemma with my neighbor and she suggested making cupcakes and then shaping them into a sunflower in a pot. This is how the final cake came out…
My cake recipe made 29 cupcakes and I made a single batch of pipeable cream cheese frosting. I used Wilton icing food coloring and some basic color chart knowledge to create the colors for the frosting. For the brown center, I used a basic star tip, the sunflower petals were the rose petal tip and for the green stem, I used a grass like tip. The pot was also made out of stars.
The frosting was delicious and was such a nice change from the standard butter cream. However, I ended up using almost three more cups of confectionery sugar than the recipe called for. Even then, the frosting was very soft and didn’t work all that well as a pipeable frosting. The recipe did say that it would work better if it was chilled. I did put the frosting in the refrigerator in between colors, but I didn’t notice that much of a difference. If I were to use the recipe again, I would consider making the frosting the day before I needed to use it.
The end result was a very tasty, one of a kind birthday cake. My daughter loved it when she saw it. Mission accomplished!

What frosting recipe did you use? For Gemma’s cupcakes, I just used a regular recipe for cream cheese frosting and chilled it overnight. (It piped more easily after sitting out a little while, though.)
