So, I was doing some house keeping on my blog and realized that I had posted about make flour tortillas but never gave out the recipe. So, here it is:
Super Easy Flour Tortilla
Makes 10-12 8-10″ tortillas
2 cups flour (white or fine whole wheat)
1/2 tsp salt
1/4 cup oil
1 tsp. baking powder
1/2-3/4 cup warm water
Mix everything in medium size bowl until it makes a sticky ball. *I tend to make it the consistency of being able to knead it a little without making your hands a mess. Cover with plastic wrap and allow it to rest 30 minutes. This is a very important step or else your dough won’t keep it’s round shape when you roll it out. After 30 minutes, roll into approx. 8″ circle and place on hot griddle and cook first side until golden and then flip to cook the other side. It will take mayb 30-60 seconds per side. Remove from pan and keep covered until ready to use.
A couple of side notes: if you an electric tortilla press, place your ball of dough and press the dough only for a few seconds, just long enough for it to retain its shape. Otherwise, you tortillas will be really, really tough. Too much oil gives it a “oily” taste so being exact with the oil is a good thing. Because I’m always in a hurry, I use my press along with my frying pan and cook up to 3 tortillas at once.
I made these once again for lunch today and they were a huge hit. I filled them with scrambled eggs and laid a small piece of cheese on top and wrapped them up. My 7 year old is able to make this by herself it is so easy. If you try the recipe, please let me know what how your tortillas came out.
