Last week, I dug out my frozen turkey back from Thanksgiving time and decided I would cook it this week. Today, I decided I would cook it since I would be home all day to watch it and clean up after it.
Everything came out beautiful. The skin was crispy and golden, it was moist on the inside, it was perfect. Then came time to make the gravy. I couldn’t find my usual recipe so I went on memory. Was that a mistake! In my mind, I remembered the recipe saying to take equal parts of gravy fat and flour and blend together and cook until golden brown. What I didn’t remember is how much gravy and flour. So I started to scoop out the fat, and scooped and scooped until I had, oh about 4 cups in the pan. Sticking with my memory, I quickly added 4 cups of flour. It was strange, I started to cook it, but it didn’t turn that nice silky, golden color. It remained a whitish paste color. But I continued to cook it for a while with no change and decided that was just how the gravy was going to be this time. I went ahead and added the rest of the juice as well as the juice from the cooked neck/liver. Immediately the gravy became like glue! Just then, my doorbell range and in walks my neighbor. She looked at me and then my pot and said, “Can I help you?!?!” 🙂 Looking back, it was rather humerous, but at the time I was rather upset at my gravy.
Together, we ended up adding 4 cups of chicken broth and 6 cups of that instant packet of gravy mix. We used a stick blender and mixed and mixed. Finally, the flour paste taste disappeared and this wonderful tasting gravy appeared. All this only took about an hour and in the end we have almost a gallon turkey gravy. I ended up freezing over half of it and will use it at a later time. But please learn from my mistake…never rely on your memory when making gravy!
