It is that time of year again when the zucchini plants begin to produce profusely. You go from having nothing in the line of squash and zucchini, and then *BAM*, you have so much of the stuff, you don’t know what to do with it. I just picked my first zucchini and yellow squash a few days ago, but I know that this is the beginning of getting overwhelmed with the stuff.
The big key to harvesting zucchini and yellow squash is to pick it early. These babies love to grow fast, especially with some fresh rain. This zucchini is just a little bit bigger than I would like.

This yellow squash is just about ready to pick. Any bigger and the skin will begin to get very tough.
My general rule of thumb is to pick sooner rather than later. The fruit will always be more tender the smaller it is.

A couple years ago, I saw on Allrecipes or yahoo or somewhere that there is a national “leave zucchini on your neighbor’s porch day”. You sneak all the extra zucchini onto everyone else’s porch. LOL I miss having zucchini plants. We tried a garden one year and got a lot of zucchini. It was my only plant that really did anything. I’m just not a gardener, so we didn’t do any this year.
