I love crackers! But I greatly dislike how much a box cost and how much artificial and unhealthy ingredients are in a box of store bought crackers.  After trying several types of recipes, I created my own, whole grain, whole wheat, oatmeal cracker recipe. These are actually GOOD for you! You can feel good about serving these to your kids. The recipe is easy enough to have your kids help you make them.
Mix it up a bit and use cookie cutters to make fun shapes out of them or sprinkle the top of the unbaked crackers with your favorite seasonings. The possibilities are endless! I hope you enjoy them as much as we do. -Janelle

Whole Grain Whole Wheat Oatmeal Cracker Recipe

These crackers are an amazing, whole grain snack that you can feel good about eating. A great project to make with kids.

Ingredients

  • cups milk
  • 1 cup old-fashion (rolled) oats
  • 1/4 cup butter (salted or unsalted)
  • 4 Tbsp sugar
  • 1 Tbsp baking powder
  • 1 tsp salt
  • 1/4 cup flax seed meal
  • 1 cup whole wheat flour
  • 1 1/2 cups white, all-purpose flour

Instructions

  1. Heat milk until very hot. Add cut-up butter and oats and stir.

  2. While milk mixture is cooling, in a large bowl, add the rest of the ingredients.

  3. Add cooled milk to flour mixture and mix until combined.

  4. You may need to slightly knead in the rest of the flour to make the dough combined.

  5. Preheat oven to 425°

  6. Divide dough into 3 equal pieces and on a lightly floured surface, roll the dough until it's as thin as possible, approx. 1/8" thick.

  7. Using the rolling pin, help place dough on a large, un-greased cookie sheet. Using a pizza cutter, cut the dough into cracker size shapes.

  8. Sprinkle lightly with pretzel salt if desired and bake for 7-8 minutes or until golden brown.

  9. The crackers will crisp up more as they cool. Store in air tight container.
