In large stock pot, add 1 tablespoon of oil with chopped onion. Cook on medium heat until onions are translucent.
Add garlic and cook for approximately 1 minute or until garlic is fragrant.
Add lentils, carrots, peppers and enough water to cover everything in the pot plus a little extra. Cook until lentils and carrots are tender, approximately 20-30 minutes.
Add tomatoes, paste and spices. Cook until thick and bubbly.
Serve over cooked rice, shredded cheese and chopped red or green onion if desired.
